Amish Potato Salad by Tanyaradzwa Rukuwah

Ingredients:

6 medium white potatoes, boiled and cut into cubes

1 small onion, finely chopped

¼ cup mayonnaise

¼ cup sour cream

1 cup chopped carrots

4 hard-cooked cooked eggs

¼ cup sugar

1 teaspoon vinegar

Salt and ground pepper to taste

 

Instructions:

Place potatoes and chopped hard boiled eggs in a large bowl. In a small bowl, combine mayonnaise, hard boiled eggs yolks, sour cream, mustard, sugar, vinegar, salt and pepper. Mix well. pour over potatoes and gently stir until thorough coated. Refrigerate until cooled, at least 30 minutes, before serving.
